We believe that the best wines are created by the best grapes. With that in mind, we implement minimal interventionist wine making techniques specifically to retain the most natural flavors and aromas from our estate grown fruit. To ensure top quality throughout the wine making process, we utilize state of the art Italian equipment and technologhy along with premier winemaking talent. Fermentations are managed carefully with varietal goals and styles guiding our winemaking decisions.
Once fermentation is complete, the aging process begins. Some wines are stored in stainless steel tanks and others in oak barrels. The desired style of each wine and each wine's natural strenghts determine the aging process. Our barrel aged wines are put inot our in-house barrel program of French, American, and Hungarian oak. Careful consideration of toast, oak strength, complexity, and flavor profiles desired for individual wines dictate the barrel selection process.
